Bagels!

Bagels are near and dear to my heart. The food of my people. So I decided it was time to try them. They came out really tasty and with a pretty nice consistency, but shaping them into real new york style bagels is still proving a bit of a challenge.

Bagels

1. Mix sugar, yeast, and half cup of warm water in a bowl. Let sit for 5 minutes then mix.

2. Mix the flour and salt in a mixer bowl. Make a well in the middle and pour in the yeast and sugar mixture.

3. Pour 1/3 cup warm water into the well. Start mixing. Add the rest of the water as needed to get a moist firm dough. Mix for a total of 10 minutes with dough hook.

5. Lightly brush a large bowl with oil and turn the dough to coat. Cover the bowl with a damp dish towel. Let rise 1 hour, it probably wont double in size.

6. Punch down dough.

7. Form 8 equal balls.

8. Poke a hole through center of each ball and form the bagels. Hole should be about 1/3 diameter of whole bagel.

9. Let sit 10 minutes under a wet towel while preparing water bath.

9. Boil the bagels for 2 minutes on each side.

10. Now is the time to top the bagels if you are going to.

11. Bake 22 minutes @ 425F.

12. Let cool, then eat!

Dough

  • 3.5 Cup Bread Flour ((Or "high gluten"))
  • 2 tsp Yeast
  • 1.5 tsp Salt
  • 1.5 tbsp Granulated Sugear
  • 1.5 Cup Water (Give or take more when kneading to get texture right)

Water Bath

  • 4 Qts Water
  • 2 tbsp Barley Malt
  • 1 tbsp Granulated Sugar

Toppings

  • Enough Sesame
  • Enough Poppy
  • Enough Kosher Salt
